when an e-mail has been forwarded a few times there are so many e-mail addresses on it that I want to eliminate before I send it

DONT FORWARD MESSAGES. Copy the content and paste it into a new email, then you can delete any email addresses and other junk that typically shows up with forwarded emails.

Put the intended email in the TO: and all others in the CC or BCC area, that will make it so no other parties will see other peoples email address.

Please don't forward messages. It's a waste of bandwidth and you put all those addresses (including yours) in someone else mailing list to be sold later.
