The mail is traveling between major post offices all the time. But mail is not always picked up from each and every office in the country on Sunday. At most smaller offices the mail does not leave that office after 5pm on Saturday, it will stay there until the first dispatch truck on Monday.

Sometimes. The USPS subcontracts with commercial airlines and other carriers, and they may choose to carry mail on their flights. I've flown on Sundays, and I've seen USPS crates being loaded along with passengers' luggage.
Then again, I'm sure it depends on each airline's policy so I wouldn't bet on mail being dispatched on Sundays. Better send those envelopes well in advance to make sure they reach their destination on time.

Sure it does.
Most mail is transported by contractors, not postal service employees. And it is transported 24/7, 365 days a year.
