Andrew Lang's Fairy Books (Red, Blue, Yellow, Green ...&c), Mopsa the Fairy, Joseph Jacobs Celtic Fairy Tales ... I have shelves full (sadly the Andrew Lang books were all borrowed and returned to their owner a long time ago).

A web-site, I believe it's called paralumun.com, has a link to original versions of well-known faerie tales. For example, Little Red Riding Hood and her grandmother being eaten by the Big Bad Wolf-- end of story. they also have obscure faerie tales like The Juniper Tree.
A book series with modern spins on classic faerie tales is also very good for anyone who is not offended by sexual details in stories. Ruby Slippers, Golden Tears; Snow White, Blood Red. Those are two I believe are still in print, but I'm not sure about the other two right now.
Hans Christian Anderson was brilliant.

Summer Knight by Jim Butcher is good. Its about a war between the summer court and the winter court of fairies.A wizard Harry Dresden tries to prevent the war.The fairies are not sugary sweet here. Each court will do whatever they can to win the war.Its a great paranormal novel.

A basket of wishes by Rebecca Paisley. Its about a fairy called Splendour who is sent to court a duke. The human does not know what to do with Splendour who gets small if not kissed regularly, drinks apricot shrub, talks to animals.

Another good fairy romance novel is the collection Faery Magic: Books: Jo Beverley,Mary Jo Putney,Karen Harbaugh,Barbara Samuel.I especially loved mary jo putney's story.

I had one from the library called The Books of Faerie(Titan Press). It has two cartoon style stories. The first(The Books of Faerie) is about Queen Titania, how she got into Faerie and became queen, etc. That's quite good. The second is called Long Walks in Dancing Shoes. I didn't think much of that but you might like it.

Mercedes Lackey has several books with fairies in them, my favorite is called The Fairy Godmother. It is the Cinderella story from the point of view of her fairy godmother.

For a light hearted look at fairies, the Artemis Fowl books by Eion Colfer are great.

If you want something more adult, Laurel Hamilton's Meredith Gentry series is a very erotic look at faery life.

I can recommend good fairy tales (don't know if that's what you meant or if you just like faeries). Try Grimm's Fairy Tales. Try to get the complete and unabridged book, it has them all (about 300.)

Neil Gaiman; Stardust, a truly lovely and original adult fairy story.

A more advanced, but equally wonderful, fairy story is Jonathan Strange and Mr. Norrel, by Susanna Clarke. Really amazing.

Kim Harrison has a cool adult fiction trilogy with fairies, witches, vampires, and werewolves. "Dead Witch Walking", "The Good, the Bad, and the Undead", "Every Witch Way But Dead".
Celia Rees has a nice young adult fiction trilogy, based on the traditional fairies and elves of England. "City of Shadows", "A Trap in Time", & "The Host Rides Out".

If you don't mean stories about fairies, but fairy tales, I recommend Hans Christian Anderson.

(He wrote 'The Little Mermaid' 'The Red Shoes' 'Thumbalina' and many others)
