The grinding noise when the pedal is depressed is the release bearing and it will disintegrate shortly and you will not be able to withdraw the clutch at all. The engine and gearbox have to be separated to fix this problem so it is easier and more economical to install a complete clutch kit while it's apart. The grey fluid is because the seals are starting to wear and the colour of the fluid is a result of black rubber and superfine aluminium off the slave and master cylinder bores. Changing the fluid could fix this but you might have to overhaul the hydraulics. Jules automotive lecturer. Australia.

How many miles on the truck? You may need a new clutch. If the clutch is worn it does not release from the engine fully and can cause grinding noise when you shift. Also from the sounds of the fluid color you may need to replace the master and slave cylinders.

Where does the noise come from? If it's loud, it is probably the throwout bearing or clutch. If it's a quiet grind that may indicate the throw of the clutch pedal, I would recommend replacing master and slave.
