If a company claims it send me an email, how can I find out if they did?

I don't recall seeing the email the company said it send me, telling me my rebate needed more information. Now they kept my money based on the fact they did warn me through email. I need to find out if there is a way to track that "email" by date or something, even if it could have been deleted by error.
