With all due respect to earlier answers, evolution HAS been observed in animals, plants, and bacteria and viruses. (See the first reference on misconceptions about evolution, and the second link for some examples.)

Evolution refers not just to the origination of a new species (which has been observed in all the biological kingdoms), but also to changes in the gene pool of an existing species. This generally means that genetic traits which give an organism a better chance at survival will tend to become more common. Humans have definitely experienced this type of evolution, although medical interventions and improved technology have decreased the natural pressure on humans to change.

People are not evolving. An evolution is the creation of a new species. Whether you are black, white, yellow, orange, or purple you are still a human being. Increase in size, weight, color, and other physical factors are adaptations to are life style's and environment.

Case in point, a close friend of mine is from South Africa. His ancestors were Dutch (who are naturally quite pale) traders who moved their many generations ago. He is an olive color due to his family being their for many years. It is not a tan, it is their whether he lived in Alaska or here in Florida. Adaptations occur all the time, but (on a macro scale ) there is NO documented case of an animal evolving (whether naturally or in a lab). Their are assumptions like the bones of apes that scientist think are from an ancient species of man, but none are proven to be valid. Also, why is it that they find these bones and that they are always that of different species of man? You realize they have not documented a single ancient species of chimpanzees!!!

As pointed out in the above answers, the human race has evolved and continues to evolve. I think a better question is what is the end product of human evolution? We're obviously on a substantially different path of evolution than any other species that ever existed. Why are we so special? Hmmm?

What are you talking about? The average height of a man has increased 8 inches in the past 1000 years. The life span has lengthened from 40 years to over 80.

People clearly are evolving, you only have to look at the evidence of difference in isolated populations. There is a whole society of color-blind people on one particular island in the Pacific.

Why do people persist in their belief that there are such things as different breeds of dog (unnatural selection), but still resist the fact that natural selection is happening?

Evolution takes many generations. Different animals have different life-spans, and reach reproductive age at different times. When the reproduction occurs at a younger age, there are many more generations for a particular period of time. Viruses and bacteria can evolve very quickly. Animals with a longer life-span take a longer time to reach mutations that are better adapted.
Most of what we think of as "evolution" in animals takes place over tens of millions of years.

What do you base such a stupid conclusion on?

Consider researching the evolutionary tree for human ancestors and you will see that over the last 3 million years there have been many different forms of bipedal apes, including us.

This is such a false statement. How do you explain the differences in the different races. Evolution, hello.

We are constantly evolving. Haven't you noticed that each generation is taller than the previous? And our appendices are shrinking with each generation? And some babies who are born now will not have wisdom teeth.
It may not be obvious but it's happening.

Who says people can't? We are constantly evolving...some ways obviously, other ways, not so much...

And in reality, it take Millions of years for things to evolve, so be patient, it probably won't happen in your lifetime...:)
