Persians are definitely white; i'm not so sure about mexicans but i guess they are too.

You shouldn't use Hispanic. The word was made up by the US Census Bureau. Mexicans are Latinos (or Latinas). Iranians only fall into "Asian" on all the forms where I work.
Their skin color tends to be on the darker tan side. Sorry, no check box for that one.

Persians are Asian; yes, Iran is in Asia. Mexicans are Latin American / Hispanic.
Neither are white (Caucasian)

mexicans are mixed with mesoamerican origins and spanish origins. Persians are Indo-Aryans therefore they are related to the ancestors of Whites but are not white.
