We are taking our first trip to Vegas next week and I have reserved a table at the Prime at the Bellagio but having never been there I am curious about what is best on their menu? (It is planned on being a "special" night if you know what I mean)

The Prime is a steakhouse....so I would go with the steak.
Butternut Squash Soup
Porterhouse Steak (comes with 6 types of mustard)
Roasted Jerusalem Artichoke
Roasted Fingerling Potatoes
If you still have room left, they have some tremendous desserts. The chocolate cake has a warm and gooey center.
A little pricey, but for a special night, there is no better.

I have eaten there several times but keep getting the Filet and the Truffel Mashed Potatoes they are some yummy and I think I could live alone on the potatoes!!
The Casear salad is very good too, it's not a typical type Casear.
Most of the fish is delish..I dont' eat fish so I can't personally tell you ...but I can tell you whatever you get will not be a disapointment.

I agree with the other answer on the Porterhouse - it is shockingly expensive but it is probably their best cut of meat unless you, in general, prefer the more tender filet mignon cuts. If you want to veer from steak, the crusted sea bass is a winner even for folks (like me) who don't like seafood and the rosemary garlic chicken is also quite good (even though it feels like a bit of a cheat to eat that at a steakhouse). Forget all of the other sides and try the truffle mashed potatoes - yum!
Don't forget to listen closely to the specials - they may be offering something on the night you visit that could trump all of this. Follow your stomach!

Go with the buffets, they're your best bet. Texas Statiion for ribs, Boulder Station on Wednesdays for Steak (cooked to order), the Fiesta has real good Strawberry Chicken, the Reserve, and Sunset Station (both in Henderson) are very good.
The Rio has a champaaign brunch on sundays, but its a bit expensive. If you want chinese go to P.F. Chaang's.

The Eiffel Tower at the Pars Hotel. YOu can watch the Belligo Water Show while you eat dinner. Excellent food.
Also, Nubo and the Hardrock, but be prepared to spend a lot of money!
