If you take the club as the Nordique/Avalanche, you could make a strong argument for Joe Sakic, Patrick Roy, Peter Forsberg or Rob Blake. But as a hockey purist, the Nordiques ended with the move to Colorado so I'll focus on just the Nordiques.
In my humble opinion, there is no better Nordique than Peter Statsny. Consider this: he left his homeland of Czechoslovakia to come to a strange country where he spoke no or very little English, knew no one and had never played an NHL game. Yet, through tenacity, skill and perseverance, he became one of the NHL's great players in a short time with most of him hockey prime behind him when he defected. He was the one thorn in the side of my beloved Habs on more occasions than I care to remember and, while I hated to see him beat the Habs, I also grew to understand what a great talent he was. As I said, speaking strictly of the Nords, Peter Statsny was the best.

I'd have to say Sakic, although Forsberg is a close second. Sakic is just a great leader.

If you're gonna go with both Nordiques and Avalanche, then clearly Sakic. If you're not counting his Avalanche years though, I'm not too sure, I was like seven when they jumped cities and can't remember most of those early years.

Well if you include Richard then obviously it was him hands down but since you said 'player' I would have to go with the hometown boy Joe Sakic. (did you know that they have already named a street after him in Burnaby B.C.?)

Statsny, Goulet are in HOF - definitely tops. Don't forget about Real Cloutier, check his numbers: 60-70 goals in a season for many seasons.
