If you are looking for acoustic type stuff here is a list of folks that fall in that. Some are worship leaders, others are Christian artists who have done worship albums. All have known styles that are rock/acoustic that do worship/praise material that is sung in churches:
Matt Redman - most of his stuff is acoustic/light rock. Great singable songs, lots of gentle acoustic stylings. Some say he is the best songwriter of church music in the last 50 years.
Ten Shekel Shirt (Lamont Heibert) - the album "Ten Shekel Shirt"
Delirious? (Martin Smith) -- their older "Cutting Edge" albums
Shane Barnard & Shane Everett - especially there latest album "An Evening With Shane & Shane" (comes with a DVD in the CD, excellent acoustics and amazing vocals)
Scott Brenner - most people don't think of Scott, but his stuff is so pensive and peaceful, but acoustic (using both piano and guitar) styled, so it is amazing. His album "Draw Near To Me" has got to be one of my favorite all time, because he used an oboe and cello instead of a bass on the whole album. With light percussion, and the guitar/piano, the acoustic sound is understated and powerful.
Kate Miner - powerful vocals with rough acoustic growl sound.. Amazing and anointed, but not pensive.
John Michael Talbot - probably the best classical/acoustic guitarist you will hear. Amazing, spiritual and all lyrics right from scripture. Not what people typically think of for acoustic praise and worship, but a great prayer time listening and worship experience.
Scott Underwood - acoustic worship and devotion with a bluesy feel and a southern rock upbeat (at times). Deep lyrics and amazing vocals. Great songwriter.
If you are looking for just single albums that are acoustic styled in the worship genre, check this out http://www.worshipmusic.com/acousticworship.html
In terms of artists you can check out a lot of worship leaders at http://www.worshipmusic.com/worshipleaders.html
they aren't all acoustic, but lots of them are.
hope that helps.
