I just signed a contract for the summer to work in a hotel as an entertainer organiser, my clients are old age pensioners. Apart from playing bingo, cards, dancing etc what else could they do.

Why don't you ask them. They're old enough to know what entertains them.

They could put on a play. If they are not in good enough shape for that, they could just do the audio version with their voices. You could also have someone visit with a nice friendly dog or other pet - that often will entertain them a lot. Or you could have a singing contest of music from their youth.

Crafts are an excellent thing to keep us old timers busy, entertained, and happy. Teach them to make paper flowers, or anything out of cheap materials. If you know anyone who works with the elderly ask them the same question. Some of us (if we can see properly love to do puzzles)

Take them for walks, find good and entertaining novels/magazines to read to them, find out about any good and funny films at the cinemas nearby to take them to watch, organize some games like novelty matches, make them do some keep-fit exercises in the morning.

I would suggest anything that doesn't make them feel like "old age pensioners" that were sent away to die. .....like bingo and cards would.
