Yes it would, but it would have to be going at approx 12% the speed of light. It would be "blue shifted" the opposite of the redshifting associated with cosmological expansion

Everyone already explained about the Doppler effect, let us now calculate the effects a little.

Red light is around 700nm (chosen arbitrarily - feel free to choose a different tomato) and green is around 550nm. So you need to get 0.78 of the initial wavelength, so you need to go at 0.22 C.

The kinetic energy of such a tomato (say it weighs 100g) would be 100g*(0.22C)^2/2 ~= 2*10^14 joules. One ton of TNT yields 4.2*10^9 J, so you will have a nice 50 kT tomato. I think it would not be so important where this energy gets dissipated, be it atmosphere near you, or your face. It will be three Hiroshimas either way.

upd: maybe I've dramatized that a little, 700nm is too deep red. On the other hand, a tomato can be much heavier than 100g :)

If you through it fast enough yes

Do a search for the doppler effect

yes it would and may even turn violet if thrown at speeds comparable to that of light. this phenomenon called violet shifting is opposite to that of red shift of the galaxy since the latter move away from us.
the overall phenomenon is called DOPPLER's EFFECT

it can turn into any color due to the velocity!!! but to throw at that velocity a someone is not correct !! there should be some machine!! good thinking its under Doppler's effect!! >>>

Maybe. It would turn red when it hit you due, in part, to the damage it would do to your body.

according to einstein's theory of relativity. but it would probably have to go faster than the speed of light.
