I believe I'd start her out on something technically impressive yet bittersweet in the lyrics and scales like "Badge" by Cream. Make sure you get some heavy electric/light acoustic strings so you'll have an unwound G. This will give you plenty of tone so you can do bends and play well in a pentatonic box. Don't just play one kind of song though. Lighten it up a bit with something you can both sing along with and have some fun. Later on if the relationship gets more serious you might learn "Nights In White Satin" by The Moody Blues. It's worked for me. Good luck and keep on playing after the girl is gone.

I like the tune from Wonderwall by Oasis, but whatever you play change the lyrics around to be about the girl so the song is genuine instead of just what a bunch of rich pop stars wrote.
