There's lots of ways to define time. One of the more popular renditions comes from dictionary.com:

time
1. A nonspatial continuum in which events occur in apparently irreversible succession from the past through the present to the future.

Alternatively, you can think of the universe in terms of variables. At any given moment, your location is determined by three positional variables (x, y, and z - set the origin wherever you like) and one temporal value, t. "Time" is the path you follow when your t-variable changes.
