Well that depends on several factors. First, what is the bolt in? Soft metal, plastic, hard metal? And what is the condition of the bolt hole? If the threads in the bolt hole have been messed up too, you'll need what's called a tap and die set to remove the bolt and rethread the hole, which then will require you to get a larger bolt for the new hole. I would guess the same if the material you are working with is plastic, but I have never worked with it. If the bolt is on a car engine, I would highly suggest going to a car repair group on Yahoo. The reason is that in something like an engine, some changes can be sensitive, increasing a bolt size can mess something up.

Get a thing called an "easy out". It can remove it. In simple basic terms, it drills into a stripped bolt, but as it drills into it, the easy out does in a direction, that causes the bolt to turn in the correct direction for it to come out. As the easy out goes into the bolt, the bolt backs out. Can be gotten at hardware stores. No, not the hardware section of like Wal-mart, but real hardware stores.

Drill a hole into the head of the bolt. thread another bolt (smaller diameter) into it. Crank the whole mess back out.

use a dremmel tool to cut a slit so that you can fit your screw driver into the slot. If it still won't unscrew out, squeeze the handle of the screwdriver with some pliers and push down hard on the driver to unscrew.
