Grady, you're an embarrassment to the country. You are hereby exiled to Antarctica.
And yes, we do! I have noticed that the New Yorkers I meet tend to match my "eh" with "huh" just as frequently.

I,m a Canadian eh. And I do say it a lot eh. Especially when I,m sitting in my igloo chugging back a beer with friends who came by for some bacon and to watch the hockey game, eh.
Seriously, I am very guilty of doing it and I have no idea why I do it.
And we Canadians are usually pretty laid back and easy going, Grady is an exception. EH!

No, Canadians don't say 'eh' after every sentence, but Americans seem to think they do. Canadians do sometimes say 'eh' at the end of a sentence to indicate a question, or to invite a reply.

There's a joke about how Canada got it's name:
When Sir John A. McDonald and his cronies were trying to figure out a new name for our (soon-to-be) great country, someone had a (typically Canadian) idea:

"Let's put all the letters into a hat and draw three of them.
That will be the new name of this place ..."
So they did ...

The first letter is pulled, and our hero shouts - "C" eh!?
The second letter is pulled, and our hero shouts - "N" eh!?
The third letter is pulled, and our hero shouts - "D" eh!?

I first heard this when my little brother told it to me, but I think he didn't understand the joke because he told it about how Alabama got it's name instead of Canada. I was confused for a second and then realized his error. It made the joke a lot funnier.

Actually, we do, eh. I'm not sure why, but, you know, sometimes I just say it without realizing it,eh? It kinda completes the sentence as a question, eh? Ya get what I'm saying, eh?

They do not say "eh" after every sentence. Some times they add "is it?" Example: I was conversing with a relative as follows:

ME: I am going to the restaurant for dinner.
HER: You are, eh. How far is it?
ME: About five miles.
HER: Is it?
ME: Yes.
HER: That's not far, eh?
ME: No.

It was like speaking in an echo chamber.

Well, Sanitizer, when we do talk to the Americans, we lay on the "ehs" real thick because you expect it of us and we don't want to disappoint you, eh? .....:))
Other than that, we really find no use for it at all, eh!

Lol. They say "eh" a lot, but not after every sentence.

Some regions of Canada do use it very often, yes.

East Coast, the Prairies, and rural areas of Ontario seem to use it a little more.
