I've just installed a jasper crate engine(5.7L) in my '99 Chevy Tahoe. It's running between 180 and 210. Is 210 too hot?

No that sounds right. The computer has to have it about that hot so the thermostat opens up at the right time. If it runs to cool your gas mileage will drop. If it hits the red you have problems. My 4.3 runs at about 220.

thermostat should open at 190 engine temp will vary depending on conditions. For example if you are running the a/c the ambient temp, towing, driving conditions. To hot starts around 240 to 260. I am a ASE certified GM mechanic.

I used to have a Suburban with the 5.7L Vortec in it. 210 was normal/average.
