You are fine for the time being, but if they grow much larger you will have to look into aeration. It will also give you the ability to add two or three more discus. Protien skiimers are not necessary as long as you are sure that there is no extra food left in the tank after feeding them and plants would help.

You've already got about five too many discus in your tank. I'd reccommend getting at least a 75 gallon aquarium.
Airstones don't do anything but make bubbles. They don't actually put oxygen into your tank. Water agitation (such as the filter putting water back into the aquarium)is what oxygenates your water. Live plants will help with this as well.

you are pushing the limit on the fish. Once they fully grow it will be too many. Airstones may help some but what I would do is get a powerhead with the air venturi on it (most have it already). It will mix air with the water plus cause some valued water movement. Discus also like alot of plants to hide in.

I have read SO much information saying not to crowd your aquarium too much - and I have never followed the rule. The only thing I find if you crowd the fish is that they have a shorter life span, but all seem to get along okay. You should be okay for now with the aeration you are getting from the filters. If you are planning on using any live plants in your aquarium, they are a great oxygen source. (I recommend planting when fish are still small, so the plants can get themselves anchored before large fish bother them.)

Rules of thumb:
One inch of fish per gallon of water. Remeber to allow for growth of fish when calculating.
And it depends on how often you have to change to water in the tank and how aggressive your current fish are as to what sort of fish you have to put in the tank to maintain its balance. Frequent changes may stress out fish making them more agressive or in some cases kill the fish.
