This is a fun question.
First throw Gambit out. Either Cap or Wolverine would take him out in minutes.
Another answerer made an incorrect statement in saying that Captain America only has his shield. Captain America is at the absolute peak of human perfection. He is a strong, as fast, as agile etc, as a man can be. He is also generally accepted as the most skilled fighter in the world. He regularly defeats opponents much more powerful than either Gambit or Wolverine. Captain America's shield is an unbreakable fusion of adamantium and vibranium. In Cap's hands it is an awesome offensive and defensive weapon.
Wolverine has an adamantium laced skeleton, and a rapid healing factor that makes him very hard to hurt. Wolverine has strength, speed and agility that are equal, but not greater than Captain America's. He has a feral berserker fighting style that gives him an advantage over most opponents. However, Cap's skill more than makes up for that advantage.
The difference is Wolverine's healing factor. Without that Captain America would win this fight (though not easily). But because of the healing factor Captain America would not be able to do enough damage to take Wolverine out before Wolverine got in the lucky shot. Over time Wolverine would wear Cap down and get past his defenses. Wolverine would take much more damage than Cap during the fight but the healing factor would ensure he stayed in the fight.
Captain America and Wolverine have fought before. Usually to a draw. Neither one really wanting to hurt the other (except once when Wolvie was not quite himself, even then Cap overcame and was able to restrain Logan until he regained his self control.)

Wolverine. Wolverine would win this battle very easily. First of all, Captain America would be the first one to go down since he has no super powers, only his shield. Therefore all Gambit has to do is to get a hold of Captain America's shield and blow it up, and leaving Captain America defenceless. However Captain America is a better fighter then Gambit and unless Gambit finds somethings to throw at Captain America and hurt him, he's bound to loose. But anyway, no matter who wins out of the two of them, Wolverine will take him down. His claw will do all the killing, and his healing factor will do the recovering from Gambit's explosions or Captain America's shield or punches. They are all very agile, but Wolverine is a beast and if he uses his full potential, he could kill both Captain America and Gambit without much difficulty.

First of all GAmbit wouldn't stand a chance. He would be killed in like 13 seconds. then Captain America and Wolverine would have it out with WOLVERINE winning in a very bloody close battle.

Hmm tough call, for part of it, check out Wolverine: Origins issue 4 next month for Cap and Wolverine.
Wolverine and Gambit have fought before, both have bested the other.
Overall I'd have to say Cap, he's been around along time.
