I need a scientifical explanation... people look fatter after sleep, not just around the eyes... is it a higher hydratation because of the horizontal position of the body ?

I wanted to know for myself why, and I am glad I came across your posting.
I took anatomy and physiology and found out by my professor that you move so much during the night and your face has so much pressure built up by pillows, your arms, hands, and etc.
Hope that was scientific enough for you.

the pooling of liquid caused by lack of movement, and pressure, causes tissue to appear swollen.
side note : You are actually taller when you wake up in the morning also
