There are 3 match officials in a soccer match, with special cases where there will be 4 o 5 officials:
Nornal soccer match (normaly amateur): by the law of the game: 3 referees (1 referee-law 5 + 2 assistant referres-law 6)
Each match is controlled by a referee who has full authority to enforce the Laws of the Game in connection with the match to which he has been appointed. Two assitant referres are appointed to assist the referee in the control of the match in accordance with the Laws of the Game.
In special tournaments or competitions, normally PROFESSIONAL FOOTBALL, there is a fourth official appointed, his role and duties must be in accordance with the guidelines of the law of the game, and one of his duties is to take over as the match referee or whether the senior assistant referee takes over as referee, he will become an assistant referee.
For the WORLD CUP a referee, two assistant referees, a fourth official (referee) and a fifth official (assistant referee) are appointed for each match competition. These referres are appointed by the FIFA Referees Committee and are selected from the FIFA international list in force. The referees should come from an association whose team is not included in the same group as the matches in question.
And the rules of replacement are:
If the referre cann't carry out his duties, he shall be replaced by the fourth official.
If one of the assistants referees is prevented from carrying out his duties, he shall be replaced by the fifth official.

There are three officials on the field, the center referee and his two assistants. There are also two officials off of the field to assist with substitution and time keeping. Those two are also backups should any of the other three get injured.
