Two come to mind
1) Hulk Hogan vs Rowdy Roddy Piper in the War to Settle the Score, the event leading to the first Wrestlemania. This was what turned me into a wrestling fan as Piper almost started a riot and I was astounded to see Mr.T jump over the barricade
2) Shortly thereafter they what I guess now they call 'Revenge' or the post Wrestlemania tour. The tour visited Maple Leaf Gardens and the whole card (my first live event was amazing)
Three matches on this even really stood out and those fortunate enough to see any of these will know what I am talking about.
The British Bulldogs vs The Hart Foundation
Tito Santana and Ricky Steamboat vs Greg Valentine and Brutus Beefcake.
Hulk Hogan vs Paul Orndorff

This is a no brainer. Shawn Michaels and Brett Hart in the 60 min. Iron Man Match. I've seen only a few Iron Man Matches in my days and most of them just drag of and are boreing as hell. This match never lost it's momentum. And when the bell rang and they said it was going into over time I jumped out of my seat. I was so glad that Michaels won it. It was the best wrestlemania moment ever next to Hulk Hogan slamming Andre The Giant. Vince McMahon put it best when he said "The boy-hood dream has come true."

Funny, because my brother and I were talking about this subject over the weekend... neither of us can stomach wrestling anymore with all the "behind-the-scenes" junk that has watered the formerly entertaining matches into a mere soap opera. However, one of the best matches I saw was back when WCW really knew what they were doing, and giving the wrestling fans what they wanted... wrestling matches (go figure). Scott Hall VS Goldberg in a ladder match. Not being a fan of Goldberg at all, it was gratifying to finally see him sell moves and actually put forth an entertaining match.

Chris Benoit vs. Bret Hart. It was like a 40 min. match in the WCW. Some of the greatest wrestling techniques I've ever seen.
