2. Spawning Mops. Goldfish spawn best in the spring after a cold winter. Most professional Goldfish breeders place floating "spawning mops" in the ponds with their breeder gold fish. These spawning mops are usually made by cutting off 18" lengths of nylon rope. One set of ends is tied together tightly, and the other ends are untwisted to make a big fluffy mop.
Goldfish lay adhesive eggs that stick to the spawning mops. Since Goldfish love to eat their eggs and baby goldfish, the mops must be removed promptly and put in another pond or large aquarium, where the eggs hatch into tiny Goldfish fry.

I have see them quite often. A drop in water salinity (in nature rain), some tanins (from dry leaves & bark washed into the river) and a few days of low light (overcast skies) can trigger fishes to breed.
Goldfish when introduced into a new aquarium tend to start! I add solar distilled water (RO water also works) to a tank to trigger breeding. I have had many varieties breed once in a couple of months.

Fish in general drop eggs in the water and the male swims over the eggs spraying splooge over them.

the mop answer above is correct
one note omission: place mos in a SHALLOW tank - too deep and it can crush eggs and babies
6-8 in of water is PLEANTY!!

Not all that often. Fish often eat their babies so you might not know when they have them.
