if you're from the UK/US.... no true indian cuisines taste like the curries you get here.... there is no curry tasting like the vindaloo, jalfrezi, madras, etc which you get out here. it's rubbish!!!!
if you want to try true indian cuisine minus the "indian" curry, try out the following places:
http://www.haandi-restaurants.com/ - true north indian food
http://www.dalchini.co.uk/ - true indian chinese (from calcutta)
Any restaurants in Wembley/Tooting - true Gujurati cuisine
http://www.woodlandsrestaurant.co.uk/ - true south indian cuisine
http://www.chaipani.co.uk/index.htm - Rajasthani cuisine
And oh yes, ALL chaats (universal to all regions of india) are non-curry-based as they are dry foods
This will give you a varied flavour of most indian cuisines that don't include curries. if you're looking for recipes:

By the way, do you know how many types of Indian curries exist in India? Perhaps best of your source of information can't put it right!! And you know this curry is substituted by non-curry eaters to gulp their food with what; just a handful variety of liquids like colas, preservative juices and hot beverages.
To your question, the variety of Indian cuisine and its tastes are awesome. The variety is so large that in a year, if you start eating from Jan 1; you can keep eating one or the other dish without repeating any till Dec 31 of the year and still left with many yet to taste. Can you think of any other place with such a variety?
The Indian structure of cuisine is so flexibly built that it can accommodate certain "people" without their so calling curry taste in the grab of (just to name a few western international names for everyone's quick and easy understanding):
- MNC McDonald's Indian Menu - with or without colas etc.
- MNC Pizza Hut's Indian Pizzas - with or without colas etc.
- MNC Dominos Indian Pizzas - with or without colas etc.
- MNC Subway Indian Sandwitches - with or without colas etc.
- MNC KFC's Indian Chickens - with or without colas etc.
- And many more those western MNCs who are desperate to enter Indian Food Market with all willingness to prepare and serve their menus as Indian sacrificing their birth companion colas etc.
