How do I register a brand name in the UK?

It's called a trademark. You should google registering trademarks. You can do it yourself for around £100, or get a solicitor to do it for around £300.

You should go through a trademark attorney like Murgitroyds. This will cost as little as £600 to register, but will be complicated if you need European Community registration (ie you need to cover Europe). Also if this is the case, you may need coverage in individual markets/countries. Also register your logo as part of the trademark. And yes, take up domain names too.
