I am a self taught graphic designer / web developer and i have been out on my own for 10 years. We also bought a calendar that we produce and sell each year and we are involved in a multi-level marketing group that distributes herbal supplements. My husband has started selling on eBay recently too and that is working very well for us.

The best thing that happened to me to help me leave corporate America, was when I got downsized. I got a healthy severance package and unemployment benefits for a year while I started my own business.

My Father-in-Law started consulting once he retired - he does some kind of Chemical analysis report writing or some such. I have a sister who works for herself as a copywriter for Internet marketing. I have another friend who does medical transcription with some service from home. I have another that does day care in her home. And another that fixes computers, and another that teaches a fitness class.

I know some awesome "at home party" businesses that really cater to women with families - PartyLite candles, Weekenders clothes (i did this one for a while), Pampered Chef & Tupperware kitchen things, Usborne Books, etc.

There are really an aweful lot of things you can do.

Find someone who will pay you for what you know or what you can do. Once you find a fit between your skill set and the market, decide what it is that you do as a consultant.

You might find yourself in demand for something completely unexpected.
