I mean I know it is up to the indivdual player/composer for newer symphonies but since ones that are just being replayed today but were written hundreds of years ago, are they free to be used as you wish?

If the original composer has been dead for more than 50 years, there is no more copyright and you may reproduce the music as you wish.

as a general rule copyright's expire 50 years after the death of the copyright owner.
