Soft wood is usually from conifer trees, pines, firs, hemlock, etc.

Hard wood is from deciduous trees - maple, oak, walnut, sycamore, etc. As the name implies hard wood is generally structurally stronger than soft woods. Nonetheless the Douglass Fir is a very strong soft wood and balsa wood is a very weak hard wood.

Soft wood: All coniferous trees. (pine, hemlock,etc.)
Hardwood: Oak, Hickory, Maple, Teak, etc.
