Those are called contrails. They are CONdensation TRAILS. The hot jet exhaust hitting sub zero temperature air [it's like 40 below at 40.000 feet] condenses the moisture out of the air to form cloud trails.

that is them dumping off some of the fuel in order to attain the proper weight so they will land properly.
The whitenes is the gas crystallizing at that high altitude.

because up there the air is so thin and no wind to dissipate that white stream that you are able to see it!!!

i think it is the heat from the after burners the gas cools down and makes it visible
