Lettuce is a cool weather crop and does not tolerate the heat of summer well. It will turn bitter and eventually "bolt" seed. If hot weather is imminent in your area, you might want to pull it out by the roots. Replant in late August or early September for a fall crop.
Good luck with your lettuce crop.

Depends on what you want. If you cut it you will encourage new growth and more lettuce. If you pull it up by the roots, you are done with it an d it won't re grow.

there are two types of lettuce: head types and loose leaf types. for the head type, you wait until they are a matures size and pull the whole thing roots and all. for the loose leaf types you can harvest & re-harvest leaves (until the things bolt). examples of head lettuce are bibb, romaine, iceberg, butter. examples of loose leaf are black seeded simpson, red salad bowl, green salad bowl.
for baby greens, or mesclun, you cut from above with scissors when the seedlings are 1-2 inches tall.
happy salad making!
