I'm having a 2 ton HVAC installed tomorrow, but I'm wondering if I should go up to 3 tons...

2 is plenty. Between 500 and 700 sq. ft. per ton is common in the industry.

IF YOU OVERSIZE THE UNIT YOU WILL BE MISERABLE. Comfort is controlled by temperature and humidity. When air conditioning you want a low humidity. Actually in the shade you will be comfortable at 80 degrees if the humidity is low. Air conditioners are very efficient humidity controllers IF THEY ARE NOT OVER-SIZED. A/C units cycle on and off by temperature not humidity so when an over-sized unit cycles off the humidity is still high and you feel cold, damp and uncomfortable. Better to slightly under size than to oversize.

With reasonable insulation and window protection, particulalrly on the south side, 500-600SF per ton is a good rule of thumb.

Did your dealer/installer run a load calculation on your condo? Sometimes just going by the general square footage is not enough. At any rate i would say 2 tons should be good for your needs.

it depends on what part of the country and the average temperature expected. Here in Texas the rule is 250 to 300 square feer per ton.
