This is evedent becasue you see the bubbles being formed when opening pop. All of the acid is not turned into CO2 though. Some of it get transformed due to the heat in the mouth (this is your fizz). if you stick a finger while pouring the drink, you are heating the pop thus creating the carbondioxide before it actually reaches your mouth. As a result you get to feel less amount of the fizz.

ok wile most of the answers on the this page are correct on the chemisty level
1 when you but your finger the pop you case the fome witch is lost of bubbles to pop and when this happens they will condice to a liquid on your finger when enouf has condiced on your finger it falls back into the pop. poping more bobles on its way and this all happen farly quickly so the poping and condiceing of the bubbles advedualy happen quicker then the aiced turing to co2 and and your drink does not fizz over take into acount to that your only poring for about 10 sec.
