The diagonal red stripes (representing Ireland) were added to the existing Union flag in 1802 when the Irish Parliament was combined with that of the mainland
Ireland left the union in 1921 with the creation of the Irish free state (though 6 counties remained in the north) but the Irish part of the flag was left intact, so don't expect patrick any time soon
The government of Northern Ireland has a flag but this is the cross of St George plus other symbols. See the link below for the plethora of flags used in the north

It isn't though, the Union Jack (I think we have to call it the Union Flag now, but I don't care) is made up of the Scottish flag (St. Andrew) and the English flag (St.George), It has nothing to do with St. Patrick or even St.David.
Anyway St.Patrick gets his saints day celebrated all over the place and the other 3 don't so he doesn't deserve to be included.

the union flag is only called the union jack when it is flown on the jack of a ship as for the English union flag there is no such thing its called just the union flag because of the union of England Scotland and wales as for Northern Ireland the six county's have nothing to do with the flag.

The union jack is part of the Northern Irish flag and that's why there is no Irish depiction on it. Eire is a seperate country and therefore has a different flag.
