When I look at the scores of the matches, there is another set of numbers in parentheses next to the actual score. For example, the USA/CZE score was listed as 0:3 (0:2). What does the 0:2 mean?

the 0-2 means the score at the half

Its the half time score. the game is in two halves of 45 minutes. In your example it means that CZE scores twice in the first half and by deduction once in the second half.
