Because back when it was written, over 2,000 years ago, society was even more male dominated than it is now. So by having a male created first this stays in tune with the way people of the era think. Perhaps the Amazons, a female dominated society, has creation of a female first and men sprang from the ground or something.

First of all, it is a story, more of an alegory of creation. It was a pre scientific explanation of simpletons trying to find meaning for their existence. Think of it as more of a camp fire story of an old grandfather who is drunk, explaining the meaning of life. It was just an idea that got exploited. If people take this creation story as true fact, then they need to explain all the holes in the theory. The problem I have with people taking the bible literally, is that every time it is read, a different interpretation evolves. No one person can agree with what it means. Its just an old book.

Adam is not the first creation in ALL religions - he is not even the first creation in the Judeo-Christian religions. Also, "Adam" in ancient Hebrew translates roughly to "mankind" (I think), and if you read the book of Genesis in the bible you will see that Adam was NOT the first creation. It took him 6 days to make that mistake.
