I would recommend Bulgaria, great weather is guaranteed, plus it's cheap out there, the Baltic Sea in Poland is also very nice, but Poland is only good provided the weather is good and this year it's supposed to be not very hot in Poland, so probably Bulgaria is a lot better. Croatia is also supposed to be very beautiful but they don't have sandy beaches there, it's pebble beaches, plus it's more expensive than Bulgaria, but if you don't mind pebble beaches then Croatia is great, as some people think Croatia is the most beautiful country in Europe.
But where exactly do you want to go??? Is it really just Eastern Europe??? Cos Eastern Europe that's: Belarus, Czech Republic, Hungry, Moldova, Poland, Romania, Russia, Slovakia and Ukraine. Bulgaria and Croatia it's Southern Europe. So is Greece. Turkey is Western Asia. So if you're really interested in just Eastern Europe then I recommend Poland.

Montenegro. Why?
Croatia's beaches are rocky, it's difficult to travel in out of season, and it's getting more expensive all the time. Greece is VERY expensive and (I hate to say it), but people in the tourist industry there are just plain rude. Bulgaria's beaches are nice, but there's not much else to see on that coast.
Montenegro has wonderful sandy beaches, clear water and it's all against a backdrop of beautiful mountain scenery. It's still quite cheap, and there's plenty of small and beautiful old towns to see (Herceg Novi, Kotor, Budva). Plus, it just voted to become independent from Serbia, so I'm sure they'll all be trying extra hard to welcome visitors to their country!

Bulgaria has something to offer to all kinds of people with variously deep pockets :). There are beautiful mountains to hike, also caves, horse riding and Thracian tombs for adventurers; SPA resorts and a healthy diet for those who need relaxation. There are also little old villages with preserved architecture, Roman baths and amphitheatres - but to discover all that you need to stray a little off the beaten track. Nice sandy beaches and there's anything between luxury hotels and bed and breakfast at small family hotels.

I would go for Croatia , Italy or Greece! All of them are amazing! But if i would have to choose one i would go for Greece since gives you a greater variety of beaches and comperativelly is cheaper than Italy. Check on the web Lefkada and Zante a couple of islands on the east side of Greece!! You 'll left in awe!! one of the best beaches i've experienced in my life!!

Croatia. Its amazing... But if you need something a little cheaper, Bulgaria is also amazing. The southern beaches towards Turkey are great. You can get nothing better than that - great food, cool people, jamming music. Great fun.

If you go to Bulgaria be careful about crime. Places like Croatia or Slovenia maybe slightly more expensive, but it's much easier to get out of trouble if you need healthcare or loose tickets/passport etc. Having said that, it probably has less low-level crime than than alot of places in the UK.
