I can't narrow it down to ONE, so I hope you don't mind if I list several faves. :)
Roses -- they're old-fashioned, classic, come in thousands of color/size/shape varieties, and have a wonderful fragrance. Additionally, the petals are edible and good in salads, dried as tea, etc.
Freesias -- they have a delicious, intoxicating fragrance that reminds me of peaches and honey. The flowers also come in beautiful colors, and I like the way they bloom along horizontal spikes. They last a long time as cut flowers, too.
Carnations -- they come in many color varieties and have a delightfully sweet/spicy fragrance that always makes me feel cheerful, for some reason. They also last a very long time as cut flowers.
I was going to name a few more faves, but I'm afraid if I do, I'll get carried away. ;D So I'll leave it at three!

Gardenia. It is a very beautiful flower and smells awesome!! I first found out about this flower when I went to Hawaii back in 1983 with a band group (while still in school). I immediately fell in love with it and have loved it ever since!!
