That's a funny question...and its not about being practical, but its about the beautiful picture of people becoming silhouettes against the sinking sun...It also symbolises the end of something (also the end of the movie).

Because its usually with the one they love, and night time is better to "ponder" your love for one another ;) also they are usually running away/leaving a previous life, so they prefer to start the new day with a new start. Also since they are riding off into the sunset, its better to travel at night instead of day when you're travelling on horse back due to the blistering heat i suppose :)

The sunset is symbolic of the end of the day and therefore the end of the episode. Riding off into the daybreak would symbolise the start of a new day and new episode and would leave the audience feeling that they missed something.

I've always thought that myself ...old pal. Indianna Jones is a classic example ..off they go on a new adventure into the sunset with no light....but it'll be dark in 10 mins whats that all about.

Because it is a film it wouldn't be right if it was too much like really life....anyway, where is your romantic side ?
(Setting off in the morning with bleary, puffy eyes and morning breath is not a classic way to end a film anyway!)
