It should be okay to pull the old wood off the overhang eaves that's supposed to be soffit?

We had our roof done last weekend and it looks bad so I'm feeling anxious to tear the aged wood down put the new soffit up.

Unless the wood is rotting, there is no reason to remove it, you can put soffit and fascia right over it. If it hast be removed, then yes, you can remove it. Just make sure you are ready to install the new material soon, or you could attract squirrels and raccoons to your attic.
