depends on the rest of your set up and what you are planning to do with it. if on the street, a 600-650 would work better, if you have lots of horse power or hope to then the 750 is a good choice...

Get a thermoquad. Made by Carter and found on Dodge 360 and 440. Make sure it has the aluminum cast on the bottom. The main body will be plastic. Much better than a Holley. It's a Weber design. You can also use an OLD Holley. It'll have all the screws in the top and you will see that the whole top comes off and it will have a steel power valve. Looks a lot like the thermaquad. I have never been a fan of the newer style holleys. They always have a flutter and always blow out power valves.

Yes and No.
It will work. If the engine is pretty well stock a 600-650cfm carb with a Vacuum secondary or a weighted secondary air valve like a Edelbrock would be better.
You would have better throttle response and mileage.
If you use this formula. CFM = CIDxRPMxVE
------------------
3464
You see that if you spin the 350 to 6,000 RPM and it was taking in 100% VE (which it wont) The 350 can only move 606 CFM . So a 600 is plenty.

When you say 350 rocket I'm thinking Olds, not chevy. A750 is a pretty big carb. If you don't have much, or anything done to this motor, yes it most likely going to be too large. I'm not saying it won't run, but you won't be getting what you are looking for. Plus holley carbs are really good carbs, but if you don't know too much about them, and it seems you don't, they can be tricky. I've been around cars all my life and I still don't have them pegged yet. If your motor is stock, or has mild mods, go with something smaller like a 600, or a 650. That's about all I'm gonna' say about that. Have fun!.........See-ya'

650 is typically the max you can go on a 350 cid with less than 600 hp. Just a good rule of thumb
