What would you think of someone who interprets a
misunderstanding between you and them as a delibrate action?
You apology, yet the person still holds a grudge and remains you
of it at every chance they get.

The only thing you can do is stick to the truth and not let it get to you when they bring it up, or at least not let them see that it bothers you. The reason they keep throwing it in your face is because they are trying to get a rise out of you. The more you give them the reaction they want the more they will use it.
