Selling a body, much like a car, is not where it's at.
Spare parts is what makes the most money.
Service also sells well. So considering the price of mechanics today, you might want to consider an hourly rate. Not sure how that would apply to bodily parts, unless the used parts that were being recycled and stitched on to living parts.

Seeing as how you are such a prime cut of beef, I wouldn't take anything less than $10 per pound! But you could probably get more money if you sectioned yourself out...I hear rump roast demands a premium, as do other choice bits!

you should check out your competitors' prices first, then you can make a decision
we are in different places, i cant suggest you anything =)
just a piece of advice:
- buy more than 10 pounds, get a bonus (another piece of meat, or a beautiful plate, or a bar of soap, your pick)
- provide a delivery service
- create a website to promote your business
