The same reason why they censor the N word on the radio and not Gringo. I guess it could be because there is more history behind the N word; it goes as far back as slaver in the United States and it carries a LOT of baggage and hatred with it.
The word Gringo...personally for me it's just a word. You could call me Sam or George and it'll have the same effect on me as the word Gringo has, because it's just a slang term with an empty meaning.
As far as the 'back is wet' thing goes, it's only because that's sexual.

I am going to tell you why. I am Latin American, I am Peruvian. I am married to a gringo. We say "gringo" to all the caucasian people. Its actually NOT DEROGATORY. If I see a Latin American that is caucasian, I would call it "gringo" too. The "n" word and the "back is wet" word is derogatory. It is used to offend someone or simply when you want to start a big fight, besides is ignorant. Gringo is not! I call my husband "my gringito" my gringo, my cute gringo, my baby gringo all the time. Its just a way to call people that are caucasian or caucasian mix or light.
Like if I go to Argentina or Puerto Rico and I see a blonde girl, I would call her/him "gringo" or "guero". "Guero" is used mostly by Mexican people along with "gringo" and "gringo" is used mostly in the rest of Latin America and Spain (Puerto Rico, Cuba, Colombia, Dominican Republic, Mexico, Chile, Peru, Argentina, Paraguay, Uruguay, Panama, Chile, Ecuador, Colombia, Venezuela, Guatemala, El Salvador, Bolivia, etc)
Now, if someone tell you "f...u... gringo" is different, or if someone tell you "cute gringo"...is nice SEE? gringo is just like saying "John" or "Carlos", just like a name. You would have to add the bad or good adjective next to it to make it sound good or bad.
like "F... U ...JOHN" OR "CUTE CARLOS"
Don't get offended when someone call you gringo because is not derogatory. Its is used all over and Latin Americans call "gringo" to other Latin Americans too.
Check this Peruvian surf world champion. She is Latin American and in my country everyone calls her "gringa" without a problem. She is hispanic. Gringo is used mostly for Americans but is not limited to Americans only, it could be used to point a Latin American too.

As far as I know, Gringo is just a word to describe a non-Mexican person, typically a Caucasian. It is not a term that inspires hate, such as the N-word

not only mexican. sometimes people use it to describe USA and canadian people. and chino for some asians. people dont say it for insulting people, just to generalize.
