I understand why concentrates are used - for shipping, etc... But is there any real difference nutritionally / chemically between rehydrated concentrate or the natural thing?

The answer to this question would depend entirely upon the juice and its vitamin constituents, and their survivability in a hydrated versus concentrated state. Some nutrients cannot or have difficulty surviving outside of liquid suspension, resulting in their chemical breakdown. This also applies to non-nutritional components which although will not change the nutritional level of the food or beverage, it can most definitely modify its taste or texture. This is why many concentrated or dehydrated foods taste very different than "fresh" equivalents.

On the other hand, some vitamins can maintain their structure even better when concentrated. I mention this because it is widely accepted that ascorbic acid (vitamin C) is one of these, and is probably the one with which people are most concerned when asking about juice concentrates. It is widely accepted that ascorbic acid degrades over time in fresh and NFC juices, but degrades more slowly (probably due to its frozen state) in from-concentrate products.

The good men have given you the reason why natural juices are better. So you already know from natural, you get the best of natural vitamins, minerals and healthy.

But now, I'd like to recommend my favourite juice mixes:-

1. Papaya + chopped Orange + Banana + Cold Water + Ice-cubes (blend them all, then mix well with milk before serving) - GREAT FOR STAMINA.

2. Chopped Fruits : Carrots + Fresh Peach + Apple + Pineapple; add 20g chopped celery + cold water + ice cubes + honey. Blend all. GREAT TO STRENGTHEN THE IMMUNE SYSTEM.

Yes, made from concentrate is mostly water. The real thing is the real thing with no dilution of vitamin goodness. Stands to reason which will be better for you.

Made from concentrate means, concentrated, then re-hydrated.
Fresh means fresh, in the process most of the nutrients are lost.

well most patuerisation processes destroy vitamins, minerals, etc in foods. this is why fresher is better.
