It depends on whether or not you want to go study in Rome. If you have time to study Italian, then do so. Assuming you are fluent in English, quite a few people in Rome speak English. The only way you can be fluent in a language is having exposure to the culture. The world is a small place, and the language barrier is getting small as well. Don't be afraid to take chances even when confronted with an obstacle. If I was given an all expense paid graduate education in Beijing, then I would go in an instant moment. Then again, are you worried about being too far away from home? It's an adventure of a lifetime without costing your family anything. You can still e-mail them from Internet Cafes, and so forth. Are you fearing a long-distance relationship? This will be a good test for the both of you because it will make you appreciate one another.

I would purchase the Rosettta Stone to get up to speed in Italian. Take immersion classes in Italian
Are you sure this university meets your goals and needs?
If you can get this offer for an Italian Graduate school, can't you get an equivalent offer from a university in the states ?
