I think that your assumption is incorrect. You took oxygen as a single atom (when you said 8 protons), and in reality oxygen never exists as a single atom. The balanced chemical equation is:
2Ca + O2 --> 2CaO
This is the balanced chemical reaction. According to this equation, there are 2 x 20 protons in Ca, 16 in oxygen and in 2CaO there are 2x20 + 16 = 56 protons, and 56/2 = 28 protons in a single CaO atom. As for the electrons, since the atom is electrically neutral, there are the same amount of electrons which means 28 electrons.
