Two reasons ... occasionally there is solvent or glue or congealed contents of the jar stuck on the threads of the lid and the hot water may soften that goo, and the hot water on the jar causes the expansion of the metal lid, easing the grip of the lid on the glass jar.
Cheers.

Hot water causes expansion in the molecules of the lid, causing the lid to expand and fit looser on the jar.

simple thermodynamics. By applying heat to the the jar lid the molecules start to expand there by releasing the grip around the glass.

the metal lid expands because of the heat to loosen it and the glass does not expand at the same rate. So it make it easy to loosen the lid.
