North Carolina is the best state for BBQ. We have two styles...the Eastern style and the Western style....Eastern uses a vinegar base with other spices...Western uses a spicy ketchup based sauce. Both are equally good. For Eastern style, try Smithfield BBQ in Smithfield, NC and for Western style, try Speedy's BBQ in Lexington, NC. There is a BBQ Festival every year in Lexington and most local restaurants are there so you could sample all the different ones at one location...see www.barbecuefestival.com

Boy, what a wide open question. I say, anything in the Carolinas (its pulled pork, but with a wide variety of sauces from pepper vinegar, to mustard, to sweet) and the best restaurants are all in little run-through towns. It is just a fact of life.

In North Carolina there are 2 styles of bar-b-q Eastern and Western I prefer the Western style because I don't like vinegar but I live in eastern NC so I don't get it here. eastern bar-b-q is vinegar based and Western is tomato based.

The original southern barbecue is found in North Carolina. It's hard to find bad barbecue there. Lexington, N.C. claims to be the barbecue capital of the world, but my personal and sentimental fave is Hursey's Barbecue of Burlington, N.C.

meat market/barbeque joints are the best. there's one in elgin texas that is delicious. i highly recommend the pork steaks.
