Pardon my ignorance, but I always thought that asian persons had dark eyes.

Yes...it's very rare in Asian people, but it IS genetically possible. Brown eyes is dominant, and grey eyes would be recessive (talking about genes). If let's say Sayuri's parents were both heterogenous for dominant brown eyes, there's a chance that Sayuri could get both the recessive genes, and have blue/grey eyes.
I'm sorry if I sound confusing but this is hard to explain because I can't draw a punnet square.
B= brown eyes b= blue/grey eyes
Sayuri's parents are both: Bb
Bb + Bb = BB, Bb, Bb, bb.
bb is blue eyes and that's what Sayuri got. Or Chiyo if you prefer to call her that.

Yes I have blue eyes if I am on the water alot or green eyes if I am in the woods alot.

Eye colour is a recessive gene. Someone, somewhere in her family line had light coloured eyes.

it doesn't matter what nationality one is, anyone can have colored eyes.
