There are many online courses that are free and give you a generic overview of Microsoft Excel:

http://www.usd.edu/trio/tut/excel/index.html

http://www.baycongroup.com/el0.htm (Actual 2003 course)

http://getit.rutgers.edu/tutorials/excel/media/excel.pdf#search='tutorial%20microsoft%20Excel'

This should get you started in finding out more about Excel 2003.

There is a way. When you save the Excel file on Office 2007, If you want Office 2003 to read it you have to save it as a .xls file. To do this you go to File>Save As and Select Excel 97-2003 Workbook. Hope this helped.

It's very similar to other versions of Excel. To be any good at it, you really need to take a class. Check your local community college.
